Jumping between the main island of Malta and it’s smaller neighbour Gozo, John takes a culinary tour through the Middle Eastern influences of this island country. Starting off with a pastry with such a complex history, it doesn’t know if it’s Maltese or Middle Eastern! John is shown how to make Middle Eastern cheese and uses this in his own recipe ‘imam bayildi’.
