This week John is in Malta, a surprising stop on his Middle Eastern tour. John soon finds out that Middle Eastern influences are everywhere, hidden just under the surface of the island’s history, language and of course, food. Jumping between the main island of Malta and it’s smaller neighbour Gozo, John takes a culinary tour through the Middle Eastern influences of this island country. Starting off with a pastry with such a complex history, it doesn’t know if it’s Maltese or Middle Eastern! John is shown how to make Middle Eastern cheese and uses this in his own recipe ‘imam bayildi’.
