John is in Alexandria on Egypt’s north coast, one of the great cities of the ancient world and still the largest on the Mediterranean. John gets stuck in to the city’s many culinary delights and seeks inspiration for a dish of his own. John starts his journey in the bustling central fish market, before being taught a recipe incorporating the flavours of the Mediterranean and the Middle East. He samples local liver and tries his hand at some of Alexandria’s sweets. Cooking on the beach overlooking the Mediterranean john cooks his own take on an Alexandria fish dish, bream wrapped in crispy pastry and served with shellfish and cherry tomatoes.
